Do not remove, the roof struts are not roof struts, they are struts... removing them might weaken the sides and set up  resonance vibration, be like driving around in an ubalanced washing machine in it's spin cycle.

Good luck with new project, was looking  at Iveco minibuses recently but that does not help you.

2 things spring to mind, ....

VW highly regarded as most reliable of the three and less rust prone vehicle but perhaps your company will reflect that in the asking price.

Standing height without continually having to bend over? can be a pain (literally) over a time if you have to stoop everywhere.

It probably is an inverter issue, running a low wattage device on  a high output inverter might not be triggering the inverter into action.
Rather than try fix big bug I suggest buying a macbook air car charger  (£4.99) and a cigarette lighter socket (free from a scrapyard or a couple of pounds elsewhere. and connecting direct to the leisure battery ?

Was wanting that side seat solid to pop the battery and invertor in and keep under the bed for a couple of drawers for clothing but in the event I will make do with less clothes and pop battery etc. under the bed.
Heating, yes, have a propex heater not yet installed in a camper I have in Greece, an old 1983 merc navaho... very nice but not started since I left Greece in January and I don't have funds/time to get back there at moment and bring it back to UK.... here lies another story... if someone wants to buy it v. cheap and bring it back to UK for MOT/Tax and I could remove my belongings they would have a steal.... another new post for this I think... only done 121,000 miles and mercs go forever... enough!

Thanks for the input Dan, much appreciated. Based on your thoughts, re-arranged and came up with 'D'  which, as it happens is almost same as your's 
D, according to my measurements would only suit a porta potti because of dimensions would would not need to be removed during showering now; I don't mind porta potti (or bucket for that matter) but looking at resale value (this hopefully first of a new micro-enterprise to part fund my travels), not as a business but say, as a friend of mine carves walking sticks as an enjoyable hobby and sells them occasionally, maybe 'E' would be more saleable to 'Joe public'?
Oh, and would like to keep middle area of the bed free as it is a pull out type and to pull from centre makes it easy to accomplish.

It seems I can run with either porta potti or cassette, no bucket as I am looking for a better potential resale value from 'regular' campers.
Not enough land at moment for a jumbo size and will be using it just for myself, occasionally my partner that lives in another Country and of course the multitude of 'chicks' it will attract.......
I attach initial general layout thoughts after measuring a LWB tranny  - A is an existing design I found trawling the web, B is my mod based upon thinking I need more worktop space.... what do youz think, suggestions welcome.
Of course shower tray in B will have to be cut around wheel arch but still 20" wide for your feet so think enough for a comfortable shower when porta potti removed.

Looking to build a camper van and my vehicle of choice due to budget will be an 03-06 mk6 LWB Transit.
In the past I did build a camper from an earlier model transit (probs 'smiley front') and can recall that I fitted a thetford cassette toilet at the rear in the shower area, behind the rear wheel arch with the emptying door in the passenger side panel.
Looking at the mk6 there does not seem to be enough room to do the above, am I correct does anyone know?
As an additional thought, would a porta potti be a better idea because you can throw it out the shower area to gain more space while showering?
