The van came with a workshop manual which has numerous detailed wiring diagrams but no picture of the fuse box (under a cover on the dash) and what each fuse does.

There's no diagram but see this screenshot. It tells you what each fuse is for: https://imgur.com/undefined/ drift hunters

On the Fuse housing you'll see the column and row labeled, for example 'A' and '2'
Check the owner's manual - Many manuals provide a fuse box diagram showing fuse locations and amperages. This is the best source for model-specific information.
